She did it again: for the fifth time, food researcher Hanni Rützler is presenting her trend report, a proven guide to the gastronomic hits of the future. The most important findings of her “Food Report 2018”, which was developed together with the Zukunftsinstitut and the Deutsche Lebensmittelzeitung, include the fact that vegetables are taking over a new main role on the plate. Learning from other food cultures and the related entirely new utilization possibilities for plants opens up unimagined innovative potential. Rützler notes: “Although we will not all become vegetarians, we have realized that meat does not have to be the center of the enjoyment universe.” Exotic highlights include the new Levante cuisine, where vegetables are the basis of most dishes. An increasing number of consumers want to “experience” their food – to give the hospitality industry the opportunity to demonstrate master craftsmanship and product quality. And there is another trend, with breakfast until the afternoon hours becoming increasingly popular.
